This lip smacking drink is so good for us, it's like drinking liquid sunlight! We make this fiber-rich, thick juice from a full-spectrum mix of health enhancing citrus fruit: orange, lemon, grapefruit, and pineapple. Lime is good to use too.
This recipe works beautifully when using a Vitamix—the resulting drink is surprisingly smooth and free from any chunky pulp. We take our citrus drinks out to our little front porch, and sit on a bench in the sun for a refreshing and satisfying late afternoon pick-me-up. For an added boost of nutrition, sprinkle some bee pollen on top just before drinking. Ingredients (makes one quart) 2 cups pure water 1 orange 1 Texas Ruby pink grapefruit 2 inch slice of pineapple 1 lemon 1 lime, optional 1 teaspoon bee pollen per glass Directions Rinse and peel all fruits. Chop and place in Vitamix or blender. When using a standard blender, blend for a longer time. The juice will not be as smooth as with a Vitamix, but will still be good. Note: If you use a Vitamix, you can use the core of the pineapple, which contains high amounts of the enzyme, bromelain. Blend until as smooth as possible. Do not strain. It can get a little frothy, but the bubbles rise to the top almost immediately. I scoop them off before drinking and then add the bee pollen. The Little Story: Liquid Light
In my life, light is a major theme, especially when living in the North. After a long cold spell this spring, which made it seem like warmth would never come back again, everything shifted.
Just prior to this time, islanders had had it. Every time we ran into a friend, we would moan about the weather. Then the illumination reappeared, and life felt like it was finally back on track again. The plants began growing like crazy. People were out and about, walking, riding bikes, playing in the parks. That sense of ease had returned. For me, light is also an immense inner theme. Each day I spend some time doing a spiritual exercise, calling upon the greater Light, cultivating a relationship with Spirit, and awaiting the joy that comes when Its presence makes Itself known. This is a gift to be sure, one that fills my heart with love. This love then spills out into all that I do throughout the day, invisibly touching the food, and touching people whom I come in contact with. The Ocean is calm, and I behold inner planes of pure Spirit. The storm is risen to the sky, and vaulted into love. The sound of a thousand violins passes o'er the golden Sea and lights upon the ancient Soul. A crescendo of God's voice is singing in the silence. |
